Can 3 phase fryer be converted to single phase 220v power?

| Without seeing the print of the fryer, I would say yes it can. Even if it is 480 volts, many times they series 2, 240 volt elements together. One caution, make sure the control circuit can handle the increased amperage you will get with the conversion. Jim

| I've ran into something I'm not familiar with. I wired according to diagram...It runs for about 15 seconds and trips 50A breaker. A B., W., & a R. wire goes from one power leg to a latching contactor. Out of the contactor to one side of each of the 3 elements. From the other side of each element, the wiring goes to a cycling contactor. The other side of the cycling contactor is connected to the other leg of power. I hope this makes sense. I'm not equipped to send picture.
